It varies a lot by size, but the conversion really only affects the content of the database that stores configuration and the list of binaries stored by Repository. The binaries themselves aren’t moved or transformed.
If you just want to check on timing, you should be able to test the meaty part of the procedure for yourself just with a database export as input, without having a replica of the live server itself or any access to a copy of the binaries.
